The Oak and Hickory kitchen cub boards are made of the hardest and heaviest wood, while Cherry, Birch and Maple are considered to be more suited for building kitchen cabinetry, and this wood is less expensive. Cabinetry woods such as Alder and Poplar work best with a glazed finish. If you are trying to create an antique look these are the types of woods you would use. Your soft woods such as Pine are more likely to scratch and dent easier.
